One of Santorini's best white wines. Made with organic vines, 12 hours skin contact, wild yeasts, 8 months on lees, unfiltered. Pushes boundaries with an oxidative sherry hint, but it works. Tight at first, densely packed; dried-apricot flavour, lemon-oil texture, tangy acidity and citrus-peel bitter twist.
